Street food in the kitchen! Nothing screams a good old street food fix than a Mexican grilled corn. There is absolutely no way to eat this messy chipotle grilled corn on the cob delicately, but hey, we promise we won’t judge! This classic recipe is elevated with our spicy twist of Dibble Chipotle Mayo. As you might know, our chipotle mayo is distinctive with it’s smoky flavour that’s known for it's rich taste notes. We love a good classic Mexican grilled corn, and a little drizzle of our chipotle mayo really does make a big difference. Hungry yet?

2 ears of corn, husked
1 Tbsp Olive Oil
2 Tbsp Dibble Chipotle Mayo
1 Tbsp Extra Virgin Olive Oil
1 Tbsp Apple Cider Vinegar
1 tsp Sea Salt
½ lime wedge
2 Tbsp finely diced Red Onion
1 Tbsp roughly chopped Coriander
1 tsp Black Sesame Seeds (optional)
Heat the grill to high.
Brush the corn with the olive oil and place them on the grill, turning them every 2-3 minutes until tender and slightly charred.
In a small mixing bowl, whisk together with a fork Dibble Chipotle Mayo, extra virgin olive oil, apple cider vinegar, sea salt and lime wedge.
Brush the freshly grilled corn with the Chipotle Mayo dressing and top with the red onion, coriander and black sesame seeds.
