Flaky, crunch and simple to make - need we say more? This vegan take on börek is filled with spinach, cheese and Dibble Sour Cream. A great appetiser or snack, it's definitely a recipe you need to make ASAP. Happy cooking!

Ingredients 

Filling

  • 1 Tbsp Olive Oil
  • 1/2 Medium Red Onion
  • 3 Garlic Cloves, thinly sliced
  • 280g Spinach, rinsed 
  • 2 Tbsp Fresh Parsley, finely chopped
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Smoked Paprika
  • 2 Cups Shredded Vegan Cheese
  • 4 Tbsp Dibble Sour Cream 

Filo Spiral

  • 6 Sheets of Filo Pastry, room temperature
  • 1/2 Cup Vegan Butter, melted
  • 1 Tbsp Sesame Seeds
  • 1 Tbsp Fresh Parsley, finely chopped
  • 1/2 tsp Flaky Salt

Method 

Filling

  1. In a medium pan on medium heat, add the oil, onion, garlic and cook for 30 seconds, stirring occasionally.
  2. Add the spinach and cook for 1 minute, stirring occasionally.
  3. Add the parsley, salt, pepper, smoked paprika and cook for 2 minutes, stirring occasionally. Turn off the heat. 
  4. In a medium mixing bowl, add the spinach mixture into the bowl along with the cheese and Dibble Sour Cream
  5. Combine all the ingredients together thoroughly. 

Filo Spiral

  1. Preheat the oven to 200°C.
  2. On a clean workbench, gently place 1 sheet of filo pastry down with the longest edge facing you.
  3. Roughly brush the filo pastry with the melted butter.
  4. Gently place another sheet of filo pastry on top of the first sheet and roughly brush it with melted butter.
  5. Repeat this one more time.
  6. Add 1/2 of the filling along the bottom edge closest to you leaving about 2cm around the edges. 
  7. Gently fold the bottom layer over the filling and roll the pastry sheets upwards, making sure you don't roll it too tightly.
  8. Holding the left end of the pastry log still with the left hand, carefully twist the log around from the centre to form a spiral. Place the spiral onto a lined baking tray.
  9. Using the remaining 1/2 of the filling, repeat steps 6 and 7.
  10. Connect the left end of the pastry log to the end of the 1st log and carefully twist it around from the centre to complete the spiral.
  11. Brush the top surface with melted butter and top with sesame seeds.
  12. Place a sheet of foil over the top of the filo spiral and bake for 15 minutes.
  13. Remove the foil and bake for a further 10 minutes or until golden brown. 
  14. Top with fresh parsley and salt.
  15. Enjoy!
